I’m not big on sharing recipes, because most of my food prep is covered by ‘assemble ingredients into a sandwich’ or ‘follow the directions on the mac and cheese box.’ But sometimes I like to mix it up, plus it’s a weekend that I don’t feel like going out and adventuring, so I might as well cook a little extra so that if I want to adventure next weekend I’ll have some stuff in the freezer.

Crockpot Pumpkin Spice Oatmeal

1. put 1 cup of oatmeal in crockpot
2. add one can of pumpkin (not pumpkin pie filling, just plain pumpkin)
3. add 2 cups of yogurt (I like whole milk vanilla, because it covers sugar and vanilla flavoring too)
4. add a teaspoon of pumpkin pie spice and a pinch of salt
5. stir it all together, cook it on low for a few hours (till it’s as gooey or non-gooey as you like it)

That’s it. It refrigerates well, it freezes well, it microwaves well, and it kind of smells like cake. It’s good with chopped up apples tossed in too, but I don’t always have the patience for that.

Anyway, I can usually get four meals out of it, two for the current week and then two that get frozen for the next week. And you only have to wash four things (the cup measure, the teaspoon, the mixing spoon, and the crock pot). Or you can just cook another thing in the crock pot right away and leave washing it till later, which is totally what I’m going to do.
